Callery’s Ice-cream may feel much harder than regular premium ice-cream after taking it out of the freezer. This is due to it having much lower fat and sugar content than regular ice-cream, Callery’s Ice-cream may feel much harder and longer to thaw. Simply leave it on the table for a while to enjoy the rich creamy texture.

Two major factors. Ingredients and Air. The amazing taste of Callery’s Ice-Cream comes from the choice of fine ingredients derived from natural sources, such as our vanilla beans. No combination of artificial flavourings can ever provide the well-rounded taste created by Nature! You might also realise that a pint of Callery’s Ice Cream is rather dense; that is because we reduce calories in our ice-cream by the clever use of ingredients, not by pumping more air into our ice-cream.

Erythritol is a sugar polyol, closely related to the typical sugars present in food. It is found widely in Nature, in fruits and vegetables such as grapes and mushrooms, and fermented products such as soy sauce. Well tolerated by the human body, Erythritol tastes almost exactly like sugar and leaves no bitter or strange aftertastes unlike other artificial sweeteners such as aspartame, acesulfame-K and glycosides such as those in Stevia. It is also ignored by oral bacteria, and therefore does not contribute to tooth cavities.

Erythritol has almost no calorie content since the body does not metabolise it. It also does not affect blood glucose and insulin levels in people, and some studies have even suggested that it may be able to reduce the rise in blood glucose after a meal. Classified as safe (GRAS) worldwide, we have chosen this sweetener to provide a pleasant sweetness to our reduced calorie ice creams without any of the negative effects of sugar.

Callery’s Reduced Calorie Ice-cream contain low amounts of sugar, and these are mainly in the form of lactose from milk, which has a low glycemic index. The sweetness comes mainly from erythritol as well, which has a glycemic index of only 1. Therefore, we believe that diabetics can enjoy Callery’s Ice-cream in moderation. We are working to scientifically test the glycemic index for our ice-cream so stay tuned!
